Making Homemade Peppermint Marshmallows for Christmas

It all started back in 2014, making homemade gingerbread cookies. Since then, every Christmas I've tried to make something new every year. I've done homemade candy canes and fudge and was having a hard time figuring out what to make this year.
I don't remember what was the inspiration, but one day I just decided that peppermint marshmallows would be perfect!

The ingredient list is fairly simple. Sugar and corn syrup for the most part. Gelatin and water for the rest, with just a little peppermint and vanilla extract for flavoring.

The gelatin starts off getting mixed with a little water.

Marshmallows are pretty much sugar.

Bringing the sugar and corn syrup to a boil.

Time to mix the boiling sugar and gelatin together. Mixing the two together released a fragrance throughout the entire kitchen.

Oh man. The smell was horrible! It seriously smelled like something was rotten. This I was not expecting.
Theresa happened to be in the kitchen and was equally disgusted. So much so that she made me check the expiration date and then googled it herself. Here's what google has to say about unflavored gelatin.
Food-grade gelatine can smell, yes. Anything going from a faint odour to a pungent stench is normal, even though it is not desirable. Perhaps, since it is made from animal carcasses, it retains a little of that pungent cadaver smell?

Time to mix everything together for 12 minutes, and adding peppermint and vanilla at the end. The smell improved by the end and disappeared completely once the flavoring was added.

Next, the whole mixture goes into a greased pan.

I added crushed candy canes to a few of them and covered them up. They'll need to sit for 4 hours.

The kids were happy to help me clean the bowl.

Mmm.

And it didn't take long for this messy concoction to end up over faces and clothes and even in Alli's hair...

That night, it was time to cut it all up.

I greased up some scissors and cut the whole thing into strips, tossing the strips into a mixture of powdered sugar and corn starch to keep them from sticking together.

After strips, it was time to cut them into cubes.

There's we go. Homemade peppermint marshmallows.

But, how do they taste?

Delicious! Not a hint of "animal carcass" flavor at all. I offered one to T but I think that smell has ruined it for her. She took a tiny nibble and was still not a fan. But even if she doesn't like them, they're still tasty.

And of course, the best thing to do with peppermint marshmallows is to add them to hot chocolate! Mmm.

Tanaka Farms 2017 - Pumpkin Patch

Welcome to Tanaka Farms! Technically it's Fall, but you wouldn't know it based on the weather here. High 80s and no clouds in the sky. We'd originally planned to go to a pumpkin patch weeks ago, but the temps were in the high 90s! A few of our neighbors took the 45 minute drive south with us. Our timing was great this morning. We arrived just a few minutes before opening at 9am. Nice shirts! Apparently everyone else decided to spend their Sunday morning at the pumpkin patch too. We were just at Disneyland yesterday. It was every bit as crowded here. Oh boy. Someone got that kid a map. Parking is free here. Entry is just $3. For $10 you can get entry, a wagon ride, and entrance to the petting zoo. Kids 2 and under were free. Before it got too busy we decided to get the wagon ride in. We've got a whole family of Mickey and Minnie ghosts. The wagon ride was a quick 10 minute drive around the perimeter of the farm. There's no narration or anything telling you what you...

Oak Glen Apple Farms - Part 1

It's the weekend! This year we're not going to get the chance to fly to Michigan to visit the apple orchards there. Theresa was still really wanting to go and the kids have been getting really excited about picking apples so Theresa found a place relatively close by and made it happen! Welcome to Oak Glen! Just a 2 hour drive from our house, this mountain community had its first apple orchards planted all the way back in 1867. Now home to over 30 different orchards, this 5 mile loop is affectionately known as Apple Country. After Ian got out of school, everyone piled in the car and headed for the hotel T booked. We're making it a 2 day event, staying the night in between so we can get an early start in the morning. After checking in and getting up to our rooms, Ian was very happy to find a quarter (remember this one, it'll come back later). Time to head to our first orchard! Snow-Line Orchard has been in production since 1898. I was really happy to come on a Friday. It...

Alli takes on more 40" rides at Disneyland

It's been a full weekend already, spending 2 days in Oak Glen California visiting apple orchards, but we're not done yet. Weekends are perfect for a Disneyland visit. I love seeing all the different Halloween decorations, plus Alli just turned 40" tall so she's got lots of brand new things she can ride. Hats this week continue the Nightmare Before Christmas theme from last week. From left to right, we've got a Jack Skellington style top-hat from Disneyland years ago. Next is Jack Skellington bursting out of a pumpkin which I think was offered last year at Disneyland. Then there's a Scary Teddy hat, followed by a Santa Jack hat complete with beard. Both parks open today at 8am. At 8:05 we were in a long line of cars trying to enter the parking structure, and by 8:45 we had made it through security and were walking through Downtown Disney. I always opt to take the 1 mile walk from the parking garage to the entrance instead of dealing with the tram. One other ...
